Two quick-to-prepare main dishes from Teresa S. Picthall of Grand Island
Easy Chicken and Dumplings
1 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons shortening
1/2 cup milk
3 cups water
1 package dry chicken noodle soup mix
Leftover chicken or 1 can boned chicken
Sift together flour, baking powder and salt. Cut in shortening until mixture resembles cornmeal. Add milk and mix thoroughly. Set aside.
In a medium saucepan, bring water to a boil. Add soup mix and simmer for 15 minutes. Add chicken and return to a boil. Spoon dough by spoonfuls into boiling soup. Reduce heat, cover and simmer for 20 minutes. DO NOT remove lid during cooking.
Easy Beef Stroganoff
1 pound ground beef
1/2 cup chopped onion
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon ground pepper
1 cup sour cream
1 can condensed cream of mushroom soup
1 can cream of chicken soup
Brown ground beef and onion, then drain. Add flour, salt, paprika and pepper. Simmer for 5 minutes. Add remaining ingredients and heat through.
Serve over prepared egg noodles.
