Try these two quick soups for weeknight meals.

Sausage, Broccoli and Cheese Soup

2 tablespoons butter or margarine

1 tablespoons flour

14 cup chopped onion

212 cups milk

12 ounces Velveeta, cubed

18 teaspoon ground pepper

1 pound smoked sausage

1 bunch of broccoli

Melt butter in a large saucepan. Add flour and cook until bubbly. Add onion and continue cooking until tender. Add milk and bring to a boil, stirring frequently. Add remaining ingredients and simmer until cheese is melted and broccoli is tender.

Taco Soup

112 pounds ground beef (or ground turkey)

1 cup of chopped onion

3 cans of chili beans

14 cup of chopped green chilies

12 cupped on diced tomatoes

2 cups of water

1 16-ounce can whole kernel corn

1 package taco seasoning

8 ounces shredded cheddar cheese

Sour cream

Brown ground beef with onion and taco seasoning. Drain and set aside. Place chili beans, green chilies, diced tomatoes, corn and water in a large pot. Bring to a boil and add meat mixture. Boil for 5 to 10 minutes until hot. Serve in bowls with a dollup or sour cream and handfull of shredded cheddar cheese.
