Start with a precooked pork roast to get these tasty sandwiches on the table in minutes. For even more flavor, serve with Oven-Baked Parmesan French Fries.
Pulled Pork Sandwiches
Preparation time: 5 minutes
Total time: 15 minutes
12 ounces cooked pork, shredded (suggestion: purchase pre-cooked pork roast in refrigerator section)
1 cup reduced-sodium chicken broth
2 tablespoons balsamic vinegar
2 tablespoons light brown sugar
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 kaiser rolls, halved
Prepare unseasoned, pre-cooked pork roast according to package instructions. Once warm, shred with two forks.
In a medium sauce pan, combine pork, chicken broth, vinegar, sugar, chili powder, paprika, cumin, salt and pepper. Set pan over medium heat and bring to a simmer. Cook 15 minutes, until liquid reduces and sauce thickens.
Serve pork on halved kaiser rolls.
Oven-Baked Parmesan French Fries
Preparation time: 15 minutes
Total time: 20 minutes
5 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup grated Parmesan cheese
Preheat the oven to 400 degrees F.
Peel potatoes and cut into 1/2-inch thick slices (lengthwise). Cut each slice into 1/2-inch thick fries.
Place the potatoes into a pot with cold water and 1 tablespoon salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily, about 3/4 of the way cooked. Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt and 1/2 teaspoon black pepper.
Toss well and lay out in a single layer on nonstick baking sheet. Bake until light brown. When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes.
Remove and let cool for 2 minutes. Serve.
Makes 4 servings of pulled pork; and 6 to 8 servings of fries.
